Whether it’s the appeal of freshly baked bread at an Artisan Market or a nation enthralled by The Great British Bake Off there is no denying that baking is back. We understand that all of you out there won’t be tackling a show stopping three-tier wedding cake, so we thought we’d start you off with a staple for any runner, cyclist, mountaineer or family who wants a healthy snack for lunch: flapjacks. Unlike traditional flapjacks, this recipe doesn’t use butter and gallons of Golden Syrup. Follow our simple steps to baking perfection.
Serving: Makes 12
Ingredients:
100g unsalted mixed nuts
50g mixed seeds
100g mixed dried fruit
1 heaped tablespoon of ground ginger
½ teaspoon of turmeric
1 orange
2 ripe bananas
1 tablespoon of runny honey
175g of porridge oats
10g oat-bran
Method
Pre-heat over to Gas Mark 5 or 190c
Pulse nuts, seeds, dried fruit and spices in a food processor then add finely grated orange zest and pour into a bowl
Peel the orange and bananas and blitz in a food processor and add to bowl along with your honey
Top up with 500ml of water
Pour into a pan and heat through on a medium heat, making sure your stir the mixture throughout
Stir for 5 minutes until the mixture as reduced and become sticky then add the rest of the dry ingredients
Line your backing tin with grease-proof paper
Transfer to a non-stick baking tin spread the mixture evenly
Bake for 45-50 minutes
Leave to cool for 10 minutes before slicing
Now sit back and enjoy!
